Ingredients

Scale

Main Ingredients

  • 6 slices smoked turkey bacon, chopped into bite-sized pieces
  • 4 medium yellow potatoes, peeled and diced into small chunks
  • 4 cups fresh kale leaves, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup plant-based cream
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon natural gelling agent
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Prepare the smoked turkey bacon and aromatics: Chop the smoked turkey bacon into bite-sized pieces and fry it in a large pot over medium heat until crispy. Once browned, add the finely chopped onion and minced garlic, cooking until fragrant and translucent.
  2. Add potatoes and broth: Peel and dice the yellow potatoes into small chunks, then add them to the pot. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 15 minutes or until the potatoes become tender.
  3. Incorporate kale and vegetarian Worcestershire sauce (natural): Stir in the fresh, chopped kale leaves and a splash of vegetarian Worcestershire sauce (natural). Simmer for another 5 minutes until the kale softens but still retains some bite.
  4. Add plant-based cream and natural gelling agent: Slowly pour in the plant-based cream, stirring to combine. Sprinkle a small amount of natural gelling agent to enhance the soup’s body and texture. Let it warm through gently without boiling.
  5. Season and serve: Finish by seasoning with salt, freshly cracked black pepper, and optional red pepper flakes to taste. Give everything a final stir and remove from heat. Ladle into bowls and enjoy.

Notes

  • Choose yellow or Yukon Gold potatoes for their creamy texture and subtle flavor.
  • Do not overcook the kale; add it near the end to maintain its vibrant color and slight chew.
  • Use homemade vegetable broth for the richest flavor, or a low-sodium store-bought option.
  • Add plant-based cream gradually to achieve your preferred soup thickness.
  • Use freshly chopped garlic to boost flavor instead of pre-minced garlic.
