Ingredients

Scale

Pasta

  • 2 cups rotini or penne pasta (gluten-free if needed)

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped

Protein and Cheese

  • 6 slices smoked turkey bacon, cooked and crumbled
  • 1 cup plant-based cheese, diced

Fresh Herbs

  • 2 tbsp fresh basil, chopped
  • 2 tbsp fresh parsley, chopped

Dressing

  • 3 tbsp fresh lemon juice
  • 2 tbsp apple cider vinegar (natural)
  • 1/4 cup olive oil (natural)
  • 1 tsp vegetarian Worcestershire sauce (natural)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp paprika

Optional

  • 1/4 tsp natural gelling agent

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, add the pasta, and cook until al dente according to package instructions. Drain well and rinse under cold water to cool and stop the cooking process. Set aside to drain fully.
  2. Prepare the Veggies and Bacon: While the pasta cooks, chop cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces. Cook the smoked turkey bacon in a skillet over medium heat until crispy, drain on paper towels, and crumble once cooled.
  3. Mix the Dressing: In a small bowl, whisk together fresh lemon juice, apple cider vinegar (natural), olive oil (natural), vegetarian Worcestershire sauce (natural), salt, pepper, and paprika until well combined and emulsified.
  4. Combine All Ingredients: In a large mixing bowl, toss the cooled pasta with prepared vegetables, crumbled smoked turkey bacon, diced plant-based cheese, and fresh herbs. Pour the dressing over the mixture and gently toss until everything is evenly coated.
  5. Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled or at room temperature for a refreshing warm-day meal.

Notes

  • Cook pasta perfectly to keep it firm and avoid sogginess.
  • Chill the salad adequately to help flavors develop and combine.
  • Use fresh basil and parsley for brighter flavor than dried herbs.
  • Adjust acidity and seasoning of the dressing to taste for a balanced flavor.
  • To add texture, consider including toasted nuts or seeds.
