Description

Enjoy a fresh and vibrant meal with Spring Fettuccine Asparagus, featuring tender asparagus, smoky turkey bacon, and creamy plant-based cheese. This quick and nutritious pasta dish balances seasonal flavors and textures, perfect for a light lunch or a satisfying dinner.

Ingredients

Scale

Pasta and Vegetables

  • 8 oz fettuccine pasta
  • 1 lb fresh asparagus, washed and trimmed, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped, plus extra for garnish

Protein and Cheese

  • 4 oz smoked turkey bacon, sliced into thin pieces
  • 1/2 cup plant-based cheese (creamy)

Oils, Sauces, and Flavorings

  • 2 tbsp olive oil
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep the Ingredients: Wash and trim the asparagus, cutting it into bite-sized pieces. Mince the garlic and chop the fresh parsley. Slice smoked turkey bacon into thin strips for quick and even cooking.
  2. Cook the Pasta: Bring salted water to a boil and cook the fettuccine according to package directions until al dente. Reserve a cup of pasta water before draining.
  3. Sauté the Turkey Bacon and Asparagus: Heat olive oil in a large pan over medium heat. Add turkey bacon pieces and cook until crispy but not burnt. Add asparagus and garlic, sautéing for 3-4 minutes until asparagus is tender yet still bright green.
  4. Combine Pasta and Sauce: Add cooked fettuccine to the pan with turkey bacon and asparagus. Stir in vegetarian Worcestershire sauce (natural), lemon zest, and lemon juice. Gently fold in plant-based cheese, adding reserved pasta water gradually to form a creamy coating.
  5. Finish and Garnish: Remove from heat and garnish with freshly chopped parsley. Taste and adjust seasoning with salt, pepper, or extra lemon juice as desired. Serve immediately while warm and fresh.

Notes

  • Avoid overcooking the asparagus to maintain a firm texture and vibrant flavor.
  • Reserve pasta water to help create a smooth, creamy sauce with plant-based cheese.
  • Add lemon juice and zest last to preserve bright and fresh notes.
  • Cook turkey bacon carefully to achieve the perfect smoky crispness without burning.
  • Use fresh herbs for garnish to elevate aroma and presentation.
