Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook your pasta according to the package instructions until al dente. Drain the pasta, reserving one cup of the pasta water for later use.
  2. Sauté Garlic and Tomatoes: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant but not browned. Add the halved cherry tomatoes and cook until they soften and release their juices.
  3. Add Spinach and Herbs: Gradually add the fresh spinach to the skillet, stirring gently to wilt the leaves evenly. Sprinkle in the chopped herbs and add a splash of lemon juice to enhance freshness.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet, folding it carefully into the spinach and tomato mixture. If the sauce seems dry, pour in some reserved pasta water to create a smooth, silky coating.
  5. Finish with Cheese and Seasoning: Sprinkle the plant-based cheese on top and stir until it melts into the sauce. Add salt, vegetarian Worcestershire sauce, and pepper to taste. If using, add the natural gelling agent to slightly thicken the sauce before serving warm.
