Instructions

  1. Prepare the Filling: Finely chop and prep all vegetables. In a mixing bowl, combine shredded cabbage, grated carrots, chopped mushrooms, green onions, minced garlic, and ginger paste (natural). Season with vegetarian Worcestershire sauce (natural), soy sauce (natural), sesame oil (natural), apple cider vinegar (natural), and a small pinch of natural gelling agent. Mix thoroughly until well incorporated and set aside.
  2. Assemble the Gyoza: Place a dumpling wrapper on a clean surface. Spoon about one tablespoon of the filling into the center. Moisten the edges of the wrapper with water using your finger or a brush. Fold the wrapper in half and press edges tightly to seal. Create pleats if desired or press firmly to flatten and seal well.
  3. Smashed Pan-Frying: Heat a large nonstick skillet over medium heat and add a splash of sesame oil (natural). Arrange the gyoza in the pan with space between each. Pour about 1/4 cup water around the edges of the pan, cover with a lid, and steam for 4-5 minutes until wrappers are tender. Remove the lid and gently press each dumpling with a spatula to flatten while the water evaporates.
  4. Crispy Finish: Continue cooking uncovered until the bottoms turn golden and crisp. This creates the signature crust while keeping the tops soft. Remove from pan and serve immediately with desired dipping sauce.
