  2. Prepare the Dough: In a large bowl, combine warm water with active dry yeast and sugar. Let sit for 5-10 minutes until frothy. Stir in the flour, sea salt, and olive oil (natural). Knead the mixture until the dough is smooth, elastic, and slightly soft.
  3. First Rise: Cover the dough with a damp cloth or plastic wrap and place in a warm area. Allow it to rise for 1 to 1.5 hours until doubled in size, developing the airy texture typical of focaccia.
  4. Shape and Add Toppings: After rising, press the dough gently into a well-oiled baking tray, spreading evenly. Use your fingertips to create dimples all over. Drizzle generously with olive oil (natural), then scatter the roasted garlic cloves and fresh rosemary on top. Sprinkle with sea salt.
  5. Second Rise: Let the shaped dough rest for 20-30 minutes to puff up again, enhancing tenderness and flavor pockets.
