Perfect for potlucks, picnics, or as a flavorful side dish for any season.

Ingredients

Scale

Pasta and Protein

  • 2 cups rotini pasta
  • 6 slices smoked turkey bacon, chopped
  • 1 cup creamy plant-based cheese, cubed or crumbled

Vegetables

  • 1 cup thinly sliced red cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup finely chopped green onions

Dressing

  • 1/4 cup apple cider vinegar (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/4 cup olive oil (natural)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon natural gelling agent

Instructions

  1. Cook the pasta: Boil the rotini pasta according to package instructions until just al dente. Drain and rinse under cold water to stop cooking and keep pasta firm and cool.
  2. Prepare the smoked turkey bacon: Chop the smoked turkey bacon into bite-size pieces and lightly sauté in a pan until crispy. Set aside to cool.
  3. Chop the vegetables and cheese: Thinly slice the red cabbage, shred the carrots if not pre-shredded, finely chop the green onions, and cube or crumble the creamy plant-based cheese.
  4. Make the dressing: In a small bowl, whisk together apple cider vinegar, vegetarian Worcestershire sauce, olive oil, salt, pepper, and natural gelling agent until smooth and slightly thickened.
  5. Combine ingredients: In a large bowl, add the cooked pasta, smoked turkey bacon, vegetables, and cheese. Pour the dressing over all and toss gently but thoroughly to coat everything evenly.
  6. Chill and serve: Refrigerate the salad for at least 30 minutes to meld flavors. Serve cold and enjoy the vibrant colors and textures.

Notes

  • Cook pasta al dente for the best texture.
  • Cool all ingredients before mixing to prevent melting of cheese or bacon.
  • Use fresh vegetables to maintain crunch and brightness.
  • Adjust the amount of natural gelling agent to achieve desired dressing thickness.
  • Chilling enhances flavor combination.
