Description

This Pesto Chicken Flatbread with Mozzarella (plant-based) offers a quick and flavorful dinner option combining grilled chicken, fresh basil pesto (natural), and melty plant-based mozzarella on a crispy flatbread. Perfect for busy weeknights or entertaining, it balances vibrant flavors and delightful textures in under 30 minutes.

Ingredients

Scale

Flatbread Base

  • 1 store-bought or homemade flatbread (gluten-free if preferred)
  • 2 tablespoons olive oil (natural), for brushing

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste

Toppings

  • 1/3 cup basil pesto (natural), fresh or store-bought
  • 1 cup shredded mozzarella (plant-based)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Prepare the Chicken: Season the chicken breasts lightly with salt and black pepper. Grill or pan-sear them over medium heat until cooked through and golden brown on both sides, about 6 to 7 minutes per side depending on thickness. Let the chicken rest for a few minutes before slicing thinly.
  2. Preheat Oven and Prepare Flatbread: Preheat your oven to 400°F (200°C). Lightly brush both sides of the flatbread with olive oil (natural). Place it on a baking sheet lined with parchment paper to help it crisp up beautifully.
  3. Assemble the Flatbread: Spread a generous layer of basil pesto (natural) evenly across the flatbread. Arrange the sliced chicken evenly over the pesto, then top with halved cherry tomatoes and thinly sliced red onions for color and flavor.
  4. Add Mozzarella (Plant-Based) and Bake: Sprinkle shredded mozzarella (plant-based) evenly over the toppings. Bake the flatbread in the preheated oven for 10 to 12 minutes or until the cheese is melted and bubbly and the flatbread edges are golden and crisp.
  5. Finish and Serve: Once baked, let the flatbread rest for 1 to 2 minutes. Cut it into slices and serve warm for a perfect combination of textures and tastes.

Notes

  • Use room temperature mozzarella (plant-based) for more uniform and faster melting.
  • Allow cooked chicken to rest to retain juiciness when sliced.
  • Do not overload toppings to keep the flatbread crispy and easy to handle.
  • Homemade basil pesto (natural) provides the freshest flavor.
  • Warm the flatbread briefly before assembling to prevent sogginess and enhance texture.
