Description

Experience the perfect combination of a crispy exterior with a tender, melting interior in these Oven Roasted Large Melting Potatoes. Roasted alongside smoky plant-based turkey bacon and fresh herbs, this easy-to-make side dish delivers rich, savory flavors and an elegant presentation, ideal for cozy dinners or festive occasions.

Ingredients

Scale

Potatoes and Bacon

  • 4 large starchy or all-purpose potatoes, scrubbed and cut into chunks (skin on)
  • 6 slices smoked plant-based turkey bacon, chopped into bite-sized pieces

Seasonings and Herbs

  • 3 tablespoons olive oil (natural)
  • 2 sprigs fresh rosemary, chopped
  • 2 sprigs fresh thyme, chopped
  • 4 garlic cloves, smashed
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Prepare the potatoes: Scrub the large potatoes thoroughly under running water, then cut them into sizable, roughly uniform chunks to ensure even roasting. Leave the skin on for added texture and nutrients.
  2. Blanch the potatoes: Boil the potato chunks in salted water for about 10 minutes until they just start to become tender but still hold their shape. This step jump-starts the soft interior, perfect for the melting texture.
  3. Cook the smoked plant-based turkey bacon: While the potatoes are blanching, cook the chopped turkey bacon in a skillet over medium heat until crispy, allowing the smoky flavor to develop fully without burning.
  4. Season and toss: Drain the potatoes thoroughly and place them in a large bowl. Add the cooked bacon, fresh rosemary, thyme, smashed garlic cloves, olive oil, sea salt, and black pepper. Toss gently but thoroughly to evenly coat each piece.
  5. Roast the potatoes: Spread the seasoned potatoes evenly on a baking sheet in a single layer for maximum crispiness. Roast in a preheated oven at 425°F (220°C) for 25-30 minutes, turning halfway through for even browning.
  6. Final touch and serve: When the potatoes are deep golden with crispy edges and tender insides, remove from the oven. Discard the garlic cloves if desired and garnish with extra fresh herbs. Serve warm and fresh.

Notes

  • Choose starchy potatoes like Russets for the best melting texture inside.
  • Do not overcrowd the baking sheet to allow the potatoes to crisp rather than steam.
  • Use plenty of olive oil (natural) to create a golden crust and help herbs stick to the potatoes.
  • Preheat the oven well to lock in moisture and crisp the exterior quickly.
  • Add fresh herbs towards the end or after roasting to prevent burning and maintain brightness.
