A quick and flavorful One-Pot Garlic Butter Shrimp Pasta made with creamy plant-based butter and fresh herbs. This dish blends tender shrimp with perfectly cooked pasta in a luscious garlic butter sauce, prepared all in one pot for easy cleanup and maximum taste. Ideal for busy weeknights or impressing guests, it delivers a rich, creamy, and vibrant meal in under 30 minutes.

Ingredients

Scale

Shrimp and Pasta

  • 12 oz fresh or thawed shrimp, peeled and deveined
  • 8 oz spaghetti or linguine pasta

Sauce and Seasonings

  • 3 tbsp (plant-based) butter, divided
  • 4 garlic cloves, minced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar
  • 2 cups vegetable broth
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice (natural)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Sauté the Shrimp: Heat 2 tablespoons of (plant-based) butter in a large pot over medium heat until melted and shimmering. Add the peeled and deveined shrimp and cook for about 2 minutes on each side until they turn pink and opaque. Remove the shrimp from the pot and set aside to prevent overcooking.
  2. Build the Flavor Base: In the same pot, add the minced garlic and cook gently for about 1 minute until fragrant but not browned. Pour in the apple cider vinegar and vegetarian Worcestershire sauce (natural) to deglaze the pan, stirring to release caramelized bits.
  3. Add Pasta and Broth: Pour in the uncooked pasta along with the vegetable broth. Ensure the pasta is mostly submerged. Season with salt and freshly ground black pepper. Bring to a simmer, stirring occasionally to prevent sticking, and cook until pasta is tender and absorbent, about 10-12 minutes.
  4. Finish with Creamy Sauce: Once pasta is cooked through, stir in the remaining 1 tablespoon of (plant-based) butter, fresh parsley, and lemon juice (natural). Add back the cooked shrimp, gently folding everything together to warm the shrimp and coat the pasta evenly with the sauce.
  5. Serve and Enjoy: Transfer the One-Pot Garlic Butter Shrimp Pasta to plates or bowls. Garnish with additional chopped parsley or a pinch of black pepper. Serve immediately and savor every garlicky, buttery bite.

Notes

  • Use room temperature shrimp for even cooking and tender texture.
  • Do not overcook the garlic to avoid bitterness; cook gently over moderate heat.
  • Stir pasta frequently to prevent sticking and ensure even cooking.
  • Reserve a small amount of vegetable broth to adjust sauce consistency if needed.
  • Add fresh herbs and lemon juice at the end to preserve their bright flavors.
