Ingredients
Scale
Dough
- 3 ½ cups all-purpose flour
- 2 ¼ teaspoons active dry yeast (1 packet)
- 1 cup warm almond milk (plant-based), about 110°F
- ⅓ cup maple syrup (natural)
- ½ cup melted vegan butter
- ¼ cup brown sugar
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Filling
- ½ cup softened vegan butter
- ⅓ cup brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Glaze
- ¼ cup maple syrup (natural)
- ½ teaspoon vanilla extract (natural)
- 1 teaspoon natural gelling agent
Instructions
- Prepare the Dough: Warm the almond milk until cozy to the touch, then sprinkle the active dry yeast over it. Let it bloom for about 5 minutes until foamy. In a large bowl, combine flour, brown sugar, salt, cinnamon, and nutmeg. Add the yeast mixture, melted vegan butter, and maple syrup. Mix until a soft, sticky dough forms.
- Knead and Rise: Flour your surface generously and knead the dough for 8 to 10 minutes until smooth and elastic. Place dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
- Create the Filling and Roll: Mix softened vegan butter, brown sugar, cinnamon, and nutmeg for the filling. Once dough has risen, roll it out on a floured surface into a 12 by 16-inch rectangle. Spread filling evenly over the dough. Roll the dough tightly into a log and slice into even rolls. Place rolls in a greased baking dish, leaving space between each.
- Second Rise and Bake: Allow rolls to rise again for 30 minutes until puffy and soft. Preheat oven to 350°F (175°C). Bake rolls for 20 to 25 minutes until golden brown and fragrant.
- Glaze and Serve: Whisk maple syrup, vanilla extract, and natural gelling agent to make the glaze. Drizzle it over warm rolls just after baking, letting it soak in for a sticky, sweet finish.
Notes
- Warm almond milk appropriately to activate yeast without killing it.
- Knead dough thoroughly for a soft, airy texture.
- Do not skip the second rise for fluffy rolls.
- Use a sharp knife or dental floss to slice rolls evenly.
- Apply glaze when rolls are warm for best absorption and shine.
