Instructions

  1. Prepare the Dough: Warm the almond milk until cozy to the touch, then sprinkle the active dry yeast over it. Let it bloom for about 5 minutes until foamy. In a large bowl, combine flour, brown sugar, salt, cinnamon, and nutmeg. Add the yeast mixture, melted vegan butter, and maple syrup. Mix until a soft, sticky dough forms.
  2. Knead and Rise: Flour your surface generously and knead the dough for 8 to 10 minutes until smooth and elastic. Place dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  3. Create the Filling and Roll: Mix softened vegan butter, brown sugar, cinnamon, and nutmeg for the filling. Once dough has risen, roll it out on a floured surface into a 12 by 16-inch rectangle. Spread filling evenly over the dough. Roll the dough tightly into a log and slice into even rolls. Place rolls in a greased baking dish, leaving space between each.
