Seasoning and Finishing

  • 1 tsp sea salt, plus more as needed
  • 1 tbsp olive oil (for massaging kale)

Instructions

  1. Prepare the Pasta and Chicken: Boil the rotini pasta until al dente, then drain and rinse under cold water to stop cooking. Season chicken breasts lightly with salt and pepper, then cook in a skillet until golden brown and cooked through. Let the chicken rest, then chop into bite-sized pieces.
  2. Crisp the Smoked Turkey Bacon: In the same skillet, cook smoked turkey bacon until crispy and fragrant. Drain on paper towels and crumble into pieces.
  3. Prepare the Kale: Wash kale thoroughly and remove thick stems. Chop the leaves finely and massage gently with olive oil and sea salt to soften and brighten flavor.
  4. Make the Caesar Dressing (Natural): In a small bowl, whisk together apple cider vinegar, vegetarian Worcestershire sauce, fresh lemon juice, minced garlic, olive oil, and black pepper until smooth and creamy.
  5. Combine and Toss: In a large bowl, combine pasta, kale, chopped chicken, smoked turkey bacon, and plant-based cheese cubes. Pour the dressing over and toss until all ingredients are evenly coated.
