Description

Italian Grinder Pasta Salad is a fresh, vibrant, and flavorful dish combining al dente pasta, crispy smoked turkey bacon, plant-based cheese, and a variety of fresh vegetables tossed in a natural Italian dressing. This easy-to-make salad offers a delightful balance of textures and tastes, perfect for lunches, picnics, or potlucks, and is highly customizable to suit your preferences.

Ingredients

Scale

Pasta & Protein

  • 2 cups rotini or penne pasta
  • 6 slices smoked turkey bacon
  • 1 cup plant-based cheese, diced or shredded

Vegetables & Herbs

  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, roughly chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup green bell pepper, diced
  • 2 tbsp fresh basil leaves (optional)

Dressing

  • 1/3 cup natural Italian dressing

Instructions

  1. Cook the Pasta: Boil the rotini or penne pasta in salted water according to package directions until al dente. Drain and rinse under cold water to stop cooking and cool the pasta for the salad.
  2. Prepare the Smoked Turkey Bacon: In a skillet over medium heat, cook the smoked turkey bacon until crispy. Transfer to paper towels to drain excess fat and cool before chopping into bite-size pieces.
  3. Chop Fresh Ingredients: While the pasta cooks, halve the cherry tomatoes, finely chop the red onion, dice the green bell pepper, roughly chop the romaine lettuce, slice Kalamata olives, and if using, roughly chop fresh basil leaves.
  4. Combine Everything: In a large mixing bowl, add the cooled pasta, chopped bacon, all the vegetables, fresh basil, and plant-based cheese. Pour the natural Italian dressing over and toss gently to coat all ingredients evenly.
  5. Chill and Serve: Refrigerate the pasta salad for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature for the best taste and texture.

Notes

  • Use cold pasta to prevent sticking and help the dressing adhere better.
  • Season with salt and pepper during mixing to balance flavors.
  • Add delicate greens like romaine just before serving to keep them crisp.
  • Refrigerate at least 30 minutes for flavors to meld beautifully.
  • Choose a quality natural Italian dressing to enhance authenticity and flavor.
