Description

Grilled Thai Coconut Chicken Skewers feature tender chicken thighs marinated in a creamy coconut milk and fragrant Thai herbs blend, grilled to juicy perfection. This vibrant dish combines zesty lime, warm garlic, and a subtle kick of chili to create a tropical flavor experience that’s quick, easy, and perfect for gatherings or a flavorful weeknight meal.

Ingredients

Scale

Chicken and Marinade

  • 1 lb boneless, skinless chicken thighs, cut into evenly sized pieces
  • 3/4 cup coconut milk (plant-based)
  • 2 tbsp fresh lime juice
  • 3 garlic cloves, minced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp brown sugar (natural)
  • 1/2 tsp red chili flakes (adjust to taste)
  • 1/4 tsp natural gelling agent (optional)

For Serving and Garnish

  • Fresh cilantro, chopped
  • Bamboo skewers, soaked in water for 30 minutes

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together coconut milk (plant-based), fresh lime juice, minced garlic, vegetarian Worcestershire sauce (natural), brown sugar (natural), red chili flakes, and natural gelling agent if using until smooth and fragrant.
  2. Marinate the Chicken: Add chicken thigh pieces to the marinade and toss to coat each piece thoroughly. Cover and refrigerate for at least one hour or preferably overnight to allow flavors to penetrate deeply.
  3. Prepare the Skewers: Soak bamboo skewers in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers, leaving small gaps between pieces to ensure even cooking.
  4. Grill the Skewers: Preheat a grill pan or outdoor grill to medium-high heat. Place the skewers on the grill and cook for 4-5 minutes on each side until nicely charred and fully cooked. Baste occasionally with leftover marinade to keep them moist and flavorful.
  5. Garnish and Serve: Remove the skewers from the grill and sprinkle freshly chopped cilantro over the top. Serve immediately while warm and juicy.

Notes

  • Choose chicken thighs for juicier, more flavorful results compared to breast meat.
  • Allow adequate marinating time for deeper flavor absorption; overnight is best.
  • Keep space between chicken pieces on skewers for even heat circulation and cooking.
  • Using a natural gelling agent helps the marinade cling well during grilling.
  • Let skewers rest for a few minutes after grilling to lock in juices.
