Ingredients

Scale

Meatball Ingredients

  • 1 lb ground lamb or beef
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 2 cloves garlic, minced
  • 1 small onion, minced
  • 1/3 cup breadcrumbs
  • 1 tbsp natural gelling agent (egg replacer)
  • 1 tbsp Greek seasoning blend (oregano, paprika, cumin) (natural)
  • 2 tbsp olive oil (natural) for cooking

Veggie Base

  • 1 medium cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 2 tbsp olive oil (natural)
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Pinch of oregano (natural)

Additional Ingredients

  • 1/2 cup plant-based feta cheese
  • Fresh herbs for garnish (optional)

Instructions

  1. Prepare the Meatball Mixture: Combine ground lamb or beef with chopped parsley, dill, minced garlic, onion, breadcrumbs, natural gelling agent, and Greek seasoning blend in a bowl. Mix gently but thoroughly to evenly distribute herbs and spices.
  2. Form and Cook the Meatballs: Shape the mixture into bite-sized meatballs around 1 inch in diameter. Heat olive oil in a pan over medium heat and cook the meatballs for 8 to 10 minutes until golden brown and cooked through, turning occasionally for an even crust.
  3. Prep the Veggie Base: Chop cucumbers, halve cherry tomatoes, and pit Kalamata olives. Toss these veggies with olive oil, lemon juice, salt, pepper, and a pinch of oregano to make a zesty dressing.
  4. Assemble the Bowl: Place the dressed veggies as a base in each bowl. Add a generous handful of plant-based feta cheese, then nestle the warm meatballs on top. Garnish with fresh herbs if desired.

Notes

  • Do not overmix the meat to keep meatballs tender.
  • Use fresh herbs for authentic bright flavors.
  • Lightly toast breadcrumbs for better texture and flavor.
  • Choose ripe tomatoes for natural sweetness.
  • Allow meatballs to rest briefly after cooking to lock in juices.
