Ingredients

Scale

Protein

  • 2 chicken breasts or thighs

Pasta

  • 1 cup orzo pasta

Vegetables

  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach or kale, chopped
  • 2 garlic cloves, minced

Cheese and Flavorings

  • 1 cup plant-based cheese, shredded or crumbled
  • 1 tablespoon lemon juice (natural)
  • 1 teaspoon lemon zest (natural)
  • 2 tablespoons olive oil (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon natural gelling agent
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Prepare the Chicken and Vegetables: Season the chicken breasts with minced garlic, lemon zest, and vegetarian Worcestershire sauce. Allow the chicken to marinate for at least 15 minutes. Meanwhile, chop the cherry tomatoes and prepare the spinach or kale by washing thoroughly.
  2. Cook the Orzo: Boil salted water and cook the orzo pasta until al dente, about 7 to 9 minutes. Drain the pasta, reserving a small amount of the cooking water for later use.
  3. Sauté Chicken and Veggies: Heat olive oil in a skillet over medium-high heat. Sear the marinated chicken on both sides until golden but not fully cooked through. Remove and set aside. In the same skillet, sauté garlic, cherry tomatoes, and spinach or kale until the greens wilt and tomatoes soften.
  4. Assemble the Bake: In a large baking dish, combine the cooked orzo, sautéed vegetables, seared chicken, lemon juice, a drizzle of olive oil, vegetarian Worcestershire sauce, and fresh herbs. Gently mix in the plant-based cheese and natural gelling agent for a creamy texture. Arrange the ingredients evenly.
  5. Bake to Perfection: Preheat the oven to 375°F (190°C). Bake the assembled dish for 25 to 30 minutes until the chicken is fully cooked and the top is golden and bubbly. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Marinate the chicken for at least 15 minutes to brighten flavor and keep it tender.
  • Cook orzo until just tender to avoid a mushy texture.
  • Use a splash of reserved orzo water to maintain moisture and creaminess in the bake.
  • Layer flavors by adding garlic, lemon, and vegetarian Worcestershire sauce at different steps for depth.
  • Allow the dish to rest for 5 minutes after baking to set textures and flavors.
