Ingredients

Scale

Main Ingredients

  • 200g pasta of choice (penne, spaghetti, or fusilli)
  • 100g plant-based goat cheese
  • 2 cloves fresh garlic, minced
  • 2 tablespoons extra virgin olive oil (natural)
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • Freshly cracked black pepper, to taste
  • 1/4 cup reserved pasta water
  • Optional: 1/2 teaspoon natural gelling agent

Variation Ingredients (Optional)

  • 1 cup seasonal vegetables (cherry tomatoes, spinach, or roasted red peppers)
  • 1/4 teaspoon red chili flakes or cayenne pepper
  • 2 tablespoons toasted pine nuts or walnuts
  • 1 tablespoon dill or cilantro (instead of basil)
  • 150g grilled chicken, shrimp, or chickpeas

Instructions

  1. Prepare the Pasta: Boil your chosen pasta in salted water until al dente, following the package instructions. Reserve a cup of pasta water before draining to help create a silky sauce later.
  2. Sauté the Aromatics: While the pasta cooks, heat extra virgin olive oil (natural) in a large skillet over medium heat. Add the minced fresh garlic and cook until fragrant and golden, about 1 to 2 minutes, taking care not to burn it.
  3. Blend the Sauce: Lower the heat and add the plant-based goat cheese to the skillet, stirring gently to melt. Add a splash of the reserved pasta water, lemon zest, fresh lemon juice, and vegetarian Worcestershire sauce (natural). Stir continuously until the sauce is creamy and smooth. Add the natural gelling agent if using to enhance the texture.
  4. Toss Pasta and Herbs: Add the cooked pasta into the skillet and toss to coat each piece evenly with the sauce. Stir in chopped fresh herbs and freshly cracked black pepper. If the sauce is too thick, add additional reserved pasta water a little at a time until the desired consistency is reached.
  5. Serve and Garnish: Serve immediately with an extra sprinkle of fresh herbs or toasted nuts for added texture and flavor. Enjoy warm for the best experience.

Notes

  • Use reserved pasta water to help bind the sauce and pasta due to its natural starch content.
  • Melt the plant-based goat cheese gently over low heat to keep the sauce creamy and prevent separation.
  • Add fresh herbs at the end for a bright, fresh flavor burst.
  • Adjust seasoning gradually, tasting as you go to balance tanginess and saltiness perfectly.
  • Serve Goat Cheese Pasta immediately to enjoy its fresh and creamy texture at its best.
