Ingredients
Scale
Pasta and Protein
- 250g Tortellini (plant-based cheese)
- 100g Smoked turkey bacon
Vegetables
- 1 cup Cherry tomatoes, halved
- 1 medium Cucumber, diced
- 1 medium Red bell pepper, diced
- 1/4 cup Red onion, thinly sliced
- 1/4 cup Fresh basil leaves, roughly chopped
Dressing
- 3 tbsp Olive oil (natural)
- 2 tbsp Apple cider vinegar (natural)
- 1 tbsp Vegetarian Worcestershire sauce (natural)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente. Once cooked, drain and rinse under cold water to cool and stop the cooking process, then set aside to drain thoroughly.
- Prepare the Smoked Turkey Bacon: While the tortellini cooks, heat a skillet over medium heat. Add the smoked turkey bacon slices and cook until crispy, flipping halfway through. Once done, transfer to a paper towel-lined plate to drain excess fat, then chop into bite-sized pieces.
- Chop the Fresh Vegetables: Wash and halve the cherry tomatoes. Dice the cucumber and red bell pepper into small, uniform pieces. Thinly slice the red onion and roughly chop the fresh basil leaves to release their flavor.
- Whisk the Dressing: In a small bowl, combine olive oil (natural), apple cider vinegar (natural), and vegetarian Worcestershire sauce (natural). Add salt and freshly ground black pepper to taste, then whisk thoroughly until the dressing is smooth and well blended.
- Toss Everything Together: In a large mixing bowl, combine the cooled tortellini, chopped smoked turkey bacon, and fresh vegetables. Pour the dressing over the top and toss gently but thoroughly to coat every ingredient evenly. Let the salad rest for a few minutes so the flavors can marry beautifully.
Notes
- Use cold tortellini to prevent sogginess and keep the salad fresh and firm.
- Chop vegetables uniformly for even texture and better presentation.
- Adjust dressing to taste by adding more vinegar or oil as preferred.
- Refrigerate the salad for at least 20 minutes before serving to let flavors deepen.
- Add fresh basil leaves last to maintain their bright color and aroma.
