Description

Dirty Martini Pasta is a comforting and exciting dish that combines the smoky crunch of smoked turkey bacon with the creamy texture of plant-based cheese and the bright tang of apple cider vinegar. Ready in under 30 minutes, this flavorful pasta offers a unique twist on traditional creamy pasta, perfect for quick weeknight meals or impressing guests.

Ingredients

Pasta

  • Spaghetti or your favorite gluten-free pasta

Protein and Dairy

  • Smoked turkey bacon, chopped
  • Plant-based cream cheese

Flavorings and Sauce

  • Apple cider vinegar (natural)
  • Garlic cloves, minced
  • Diced green olives
  • Vegetarian Worcestershire sauce (natural)
  • Olive oil
  • Natural gelling agent (optional)

Herbs and Seasoning

  • Fresh parsley, chopped
  • Black pepper, freshly cracked, to taste
  • Sea salt, to taste

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the spaghetti or gluten-free pasta until just al dente according to package instructions. Reserve half a cup of pasta water before draining, then set the pasta aside.
  2. Sauté the Smoked Turkey Bacon: Heat olive oil in a large skillet over medium heat. Add chopped smoked turkey bacon and cook until crispy and fragrant, about 5 minutes, creating a smoky base.
  3. Build the Sauce: Add minced garlic to the skillet and sauté for about 1 minute until aromatic but not browned. Pour in apple cider vinegar (natural) and vegetarian Worcestershire sauce (natural), stirring gently to combine. Add plant-based cream cheese and allow it to melt slowly, stirring constantly to form a smooth sauce. If desired, sprinkle in a small pinch of natural gelling agent and stir until dissolved.
  4. Add Olives and Season: Fold in diced green olives. Season with sea salt and freshly cracked black pepper to taste. If sauce is too thick, loosen with reserved pasta water one tablespoon at a time until the sauce coats the noodles perfectly.
  5. Combine Pasta and Sauce: Add cooked pasta to the skillet and toss gently to coat every strand with the tangy, smoky sauce. Heat together for an additional minute to meld all the flavors.
  6. Garnish and Serve: Remove from heat and sprinkle freshly chopped parsley over the pasta for freshness and color. Serve immediately for best taste and texture.

Notes

  • Use a quality plant-based cream cheese that melts well for the best creamy texture.
  • Reserve pasta water to adjust sauce consistency and add a silky finish.
  • Make sure the smoked turkey bacon is cooked crisp for a great contrast in texture.
  • Adjust apple cider vinegar carefully to balance acidity.
  • Fresh parsley adds essential brightness and vibrant color to the dish.
