Ingredients

Scale

Main Ingredients

  • 8 oz short pasta (rotini or penne)
  • 1 cup crab meat
  • 4 slices smoked turkey bacon, cooked and crumbled
  • 1 cup cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, chopped
  • 3 green onions, sliced

Dressing Ingredients

  • 1/2 cup plant-based mayonnaise (natural)
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard (natural)
  • 2 tbsp fresh herbs (dill or parsley), chopped
  • 1 tsp natural gelling agent
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Pasta: Boil the short pasta until al dente. Drain well and rinse under cold water to stop the cooking process and keep the pasta firm and cool for the salad.
  2. Prepare the Veggies and Bacon: Chop cucumber, cherry tomatoes, red bell pepper, and green onions into bite-sized pieces. Cook and crumble the smoked turkey bacon, then allow it to cool.
  3. Mix the Dressing: In a small bowl, whisk together plant-based mayonnaise, apple cider vinegar, Dijon mustard (natural), fresh herbs, natural gelling agent, salt, and pepper until smooth and creamy. Adjust seasoning as desired.
  4. Combine Everything: In a large mixing bowl, gently toss the cooled pasta, crab meat, chopped vegetables, and crumbled bacon. Pour the dressing over and mix until well coated.
  5. Chill and Serve: Refrigerate the salad for at least 30 minutes to let the flavors meld. Garnish with extra fresh herbs and serve chilled or at room temperature.

Notes

  • Rinse pasta immediately after cooking to prevent it from becoming mushy.
  • Use fresh crab meat for the best flavor.
  • Taste and adjust the dressing for the perfect balance of tang and creaminess.
  • Ensure all ingredients are cool before mixing to maintain crisp textures.
  • Chill the salad to enhance flavor melding before serving.
