Ingredients

Scale

Dough Ingredients

  • 3 ½ cups unbleached all-purpose flour
  • 2 ¼ tsp active dry yeast (one packet)
  • 1 cup warm water (about 110°F / 43°C)
  • ⅓ cup maple syrup (natural)
  • ⅓ cup plant-based butter, softened, plus extra for brushing
  • 1 tsp ground cinnamon (natural)
  • 1 tsp sea salt
  • ½ cup non-dairy milk (such as almond or oat), room temperature
  • 1 tsp natural gelling agent

Cinnamon Sugar Swirl & Topping

  • ¾ cup dark brown sugar (natural)
  • 2 tsp ground cinnamon (natural)
  • 2 tbsp plant-based butter, melted (for brushing)

Optional Variations

  • ½ cup chopped walnuts or pecans
  • ½ cup raisins or chopped dates
  • Substitute coconut sugar for dark brown sugar (natural)
  • 1 tsp orange or lemon zest
  • Swirl filling with grape juice reduction

Instructions

  1. Prepare the Dough: In a small bowl, activate the active dry yeast by mixing it with warm water. Let it sit until frothy and bubbly, about 5-10 minutes. In a large mixing bowl, combine the flour, sea salt, and 1 tsp cinnamon. Add the softened plant-based butter, maple syrup (natural), non-dairy milk, and the yeast mixture. Mix until a rough dough forms, then transfer to a floured surface and knead for 8-10 minutes until smooth and elastic.
  2. First Rise: Lightly oil a large bowl and place the dough inside. Cover with a clean kitchen towel and set in a warm place. Let it rise for 1 to 1.5 hours or until it doubles in size.
  3. Assemble the Cinnamon Sugar Swirl: Roll the risen dough into a large rectangle on a floured surface. Combine dark brown sugar (natural) and 2 tsp cinnamon, then sprinkle evenly over the dough. Brush the dough surface lightly with melted plant-based butter, then roll tightly into a log. Pinch the edges to seal the sugar filling inside.
  4. Second Rise and Baking: Grease a loaf pan and place the rolled dough inside. Cover and let rise for about 45 minutes until nearly doubled. Meanwhile, preheat the oven to 350°F (175°C). Bake the bread for 30-35 minutes until golden on top and hollow sounding when tapped.
  5. Cooling and Serving: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack. Cool completely or serve warm with optional toppings like powdered sugar (natural), maple syrup (natural), or plant-based butter.

Notes

  • Use fresh yeast within its best-by date for optimal rise.
  • Allow plant-based butter and non-dairy milk to reach room temperature before mixing.
  • Do not skip kneading to develop gluten for perfect bread texture.
  • Cover the dough with a damp towel or plastic wrap during rising to prevent drying.
  • Use an oven thermometer to ensure proper baking temperature and avoid undercooked centers.
