Description

Easy Cheesy Potatoes is a comforting and creamy baked dish featuring tender potatoes, crispy smoked turkey bacon, and melted plant-based cheese. This family-friendly recipe combines smoky and rich flavors with a smooth, cheesy sauce, perfect for cozy dinners and gatherings. Adaptable and simple to prepare, it delivers satisfaction and warmth in every bite.

Ingredients

Scale

Potatoes

  • 4 cups diced firm white or Yukon Gold potatoes

Smoky Protein

  • 6 slices smoked turkey bacon, chopped into bite-sized pieces

Cheesy Sauce

  • 2 cups plant-based milk
  • 1 1/2 cups plant-based cheese (melty variety), shredded
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon onion powder (natural)
  • 1 teaspoon garlic powder (natural)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 teaspoon natural gelling agent (e.g. pectin or agar)
  • 1 tablespoon apple cider vinegar (natural)

Instructions

  1. Prepare the potatoes: Peel and dice the potatoes into evenly sized cubes to ensure even cooking. Place them in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook until tender when pierced with a fork, about 10-12 minutes. Drain well and set aside.
  2. Cook the smoked turkey bacon: While the potatoes cook, chop the smoked turkey bacon into bite-sized pieces. Brown them in a skillet over medium heat until crispy and fragrant, releasing smoky flavor.
  3. Make the cheesy sauce: In a saucepan, combine plant-based milk, plant-based cheese, vegetarian Worcestershire sauce (natural), onion powder (natural), garlic powder (natural), salt, and pepper. Slowly heat while stirring until the cheese melts completely and the sauce thickens. Add the natural gelling agent to achieve a creamy, smooth consistency. Stir in apple cider vinegar (natural) for a balancing tang.
  4. Combine and bake: Mix the cooked potatoes and crispy smoked turkey bacon into the cheesy sauce until well coated. Transfer the mixture to a greased baking dish. Bake at 375°F (190°C) for 20-25 minutes, or until bubbly and golden on top.

Notes

  • Choose waxy potatoes like Yukon Gold for creamier texture that holds well when baking.
  • Ensure smoked turkey bacon is crispy for a nice texture contrast with the potatoes.
  • Use natural gelling agent carefully to keep the sauce thick and avoid a watery consistency.
  • Let the baked dish rest for 5 minutes before serving to set flavors and make serving easier.
  • Taste and adjust seasoning just before baking for best flavor.
