Description

Bang Bang Chicken Skewers are a vibrant, flavorful dish featuring tender grilled chicken thighs coated in a spicy, creamy natural sauce. Perfect for quick weeknight dinners or backyard barbecues, this recipe combines a bold blend of spicy, sweet, and tangy elements, complemented by fresh garnishes and versatile serving options that deliver an unforgettable taste experience.

Ingredients

Scale

Chicken

  • 1 lb chicken thighs, trimmed and cut into bite-sized pieces
  • Wooden or metal skewers, soaked if wooden

Bang Bang Sauce

  • 1/2 cup plant-based mayonnaise
  • 2 tbsp sriracha (natural)
  • 1 tbsp honey (natural)
  • 1 tbsp apple cider vinegar
  • 1 tbsp vegetarian Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1 tsp rice vinegar

Garnishes and Serving

  • Julienned carrots
  • Cucumber slices
  • Chopped green onions

Instructions

  1. Prepare the Chicken: Trim any excess fat from the chicken thighs and cut them into evenly sized bite pieces to ensure even cooking and an easy-to-eat skewer experience that stays juicy and tender.
  2. Make the Bang Bang Sauce: In a bowl, whisk together plant-based mayonnaise, sriracha (natural), honey (natural), apple cider vinegar, vegetarian Worcestershire sauce, garlic powder, and rice vinegar until smooth and creamy, creating a harmonious blend of spice, tang, and sweetness.
  3. Marinate the Chicken: Toss the chicken pieces in half of the prepared sauce, coating each piece well. Let them marinate for at least 30 minutes or up to 2 hours in the refrigerator to absorb the vibrant flavors deeply.
  4. Skewer and Grill: Thread the marinated chicken pieces evenly onto soaked wooden skewers or metal skewers, making sure not to overcrowd. Grill over medium-high heat for about 4-5 minutes per side until the chicken has nice char marks and is cooked through but remains juicy.
  5. Coat and Serve: Once grilled, brush the remaining Bang Bang sauce generously over each skewer. Serve garnished with julienned carrots, cucumber slices, and chopped green onions for refreshing texture and color.

Notes

  • Marinate longer (up to 2 hours) for deeper flavor.
  • Use metal skewers for even heat and faster cooking.
  • Reserve some sauce for dipping alongside cooked skewers.
  • Pat dry chicken before marinating for better sauce adhesion and texture.
  • Avoid pressing skewers while grilling to keep chicken juicy.
