Description

Easy Air Fryer Salmon Tacos with Slaw offer a vibrant, healthy, and flavorful meal that comes together quickly. Crisp salmon cooked perfectly in the air fryer pairs with fresh, tangy slaw and warm corn tortillas for a delicious lunch or dinner option that is wholesome and fuss-free.

Ingredients

Scale

Salmon and Seasoning

  • 4 salmon fillets, skin removed
  • 1 tbsp olive oil (natural)
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Slaw

  • 2 cups red cabbage, thinly sliced
  • 1 cup carrots, grated
  • 1/4 cup cilantro, chopped
  • 3 tbsp plant-based mayonnaise
  • 1 tbsp apple cider vinegar (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp lime juice
  • 1/4 tsp natural gelling agent

Tortillas

  • 8 small corn tortillas

Optional Garnishes

  • Slices of avocado (plant-based)
  • Pickled jalapeños
  • Toasted pumpkin seeds

Instructions

  1. Prepare the Salmon: Pat salmon fillets dry and rub evenly with olive oil (natural), chili powder, garlic powder, salt, and pepper. Preheat your air fryer to 400°F (200°C).
  2. Air Fry the Salmon: Place the seasoned salmon fillets in a single layer in the air fryer basket. Cook for 10-12 minutes or until the salmon flakes easily and has a slightly crispy exterior, adjusting time based on fillet thickness.
  3. Make the Slaw: In a large bowl, combine thinly sliced red cabbage, grated carrots, and chopped cilantro. In a separate bowl, whisk together plant-based mayonnaise, apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), lime juice, and natural gelling agent until well blended. Toss the slaw vegetables with the dressing until evenly coated.
  4. Warm Tortillas: Heat corn tortillas in a dry skillet over medium heat for about 20 seconds per side until soft and flexible, or microwave wrapped in a damp cloth for 15 seconds.
  5. Assemble the Tacos: Break the cooked salmon into chunks and distribute evenly over warmed tortillas. Top generously with the fresh slaw and garnish with additional lime juice or cilantro, if desired.

Notes

  • Cut salmon fillets into uniform pieces for even cooking.
  • Do not overcrowd the air fryer basket; allow space for crisping.
  • Patting salmon dry before seasoning helps achieve a crispy crust.
  • The slaw tastes best if made an hour ahead to allow flavors to meld.
  • Warm tortillas properly to prevent cracking when folding.
