Instructions

  2. Mix the Dough: In a large bowl, combine the all-purpose flour, salt, and natural gelling agent. Add the natural ube paste, vegetable oil, and the proofed yeast mixture. Mix until a sticky dough forms, then knead by hand or with a stand mixer for 8 to 10 minutes until smooth and elastic.
  3. First Rise: Place the kneaded dough into a lightly oiled bowl, cover with a clean cloth, and allow it to rise in a warm place for 1 to 1.5 hours or until doubled in size.
  4. Shape the Rolls: Gently punch down the dough to release air bubbles. Divide the dough into equal portions and shape each into a smooth ball. Arrange the rolls close together on a parchment-lined baking tray to ensure soft sides.
