Description

Tomato Tartlets are a fresh and vibrant snack that combines juicy ripe tomatoes with creamy plant-based cheese on a crisp, flaky puff pastry base. Perfect as a quick bite or elegant appetizer, these tartlets are easy to prepare, customizable, and ideal for any occasion.

Ingredients

Puff Pastry Base

  • Ready-made Puff Pastry, enough for 12 tartlets

Tomato Topping

  • Fresh Tomatoes, 3 medium ripe
  • Apple Cider Vinegar (natural), 1 tablespoon
  • Olive Oil, 1 tablespoon plus extra for brushing
  • Natural Gelling Agent, 1 teaspoon
  • Sea Salt, ½ teaspoon
  • Freshly Ground Black Pepper, ¼ teaspoon
  • Garlic Powder (natural), a pinch

Cheese and Herbs

  • Plant-based Cheese (plant-based), ¾ cup thinly spread
  • Fresh Basil Leaves, ¼ cup, roughly chopped or whole

Instructions

  1. Prepare the Puff Pastry Base: Roll out your ready-made puff pastry on a lightly floured surface to about ¼ inch thick. Cut the pastry into small rounds or squares, depending on your preferred tartlet shape. Place the pastry pieces on a baking sheet lined with parchment paper and lightly prick the center of each with a fork to prevent excessive puffing during baking.
  2. Prepare the Tomato Topping: Slice fresh tomatoes thinly and toss them gently with apple cider vinegar (natural), olive oil, sea salt, freshly ground black pepper, garlic powder (natural), and the natural gelling agent to help the topping set without losing moisture.
  3. Add Plant-Based Cheese and Basil: Spread a thin layer of plant-based cheese (plant-based) on each pastry base. Top generously with the marinated tomatoes and scatter fresh basil leaves on top for a bright herbal note.
  4. Bake to Perfection: Bake the tartlets in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the pastry is golden and crisp and the tomatoes have softened slightly but still hold their shape.
  5. Cool and Serve: Allow the tartlets to cool for a few minutes before serving to let the flavors meld and the topping stabilize, making them easier to enjoy.

Notes

  • Use room-temperature ingredients to help the puff pastry bake evenly and avoid soggy bottoms.
  • Choose ripe tomatoes for natural sweetness and juiciness.
  • Avoid overloading the topping to keep the pastry crisp.
  • Chill puff pastry before baking for a flaky, tender crust.
  • Brush edges of the pastry with olive oil to prevent drying out and promote beautiful browning.
