Texas Roadhouse Smothered Chicken is a comforting and flavorful dinner featuring tender chicken breasts layered with smoky turkey bacon, creamy plant-based cheese, and a rich natural sauce. This easy-to-make meal delivers bold, hearty flavors and a luscious texture perfect for any weeknight dinner or special occasion.

Ingredients

Scale

Chicken and Protein

  • 4 fresh boneless skinless chicken breasts
  • 6 slices smoked turkey bacon
  • 100g plant-based cheese, sliced

Vegetables

  • 1 medium onion, diced
  • 1 cup mushrooms, sliced
  • 3 garlic cloves, minced
  • Fresh parsley, chopped (for garnish)

Sauce

  • 2 tablespoons plant-based butter
  • 2 tablespoons all-purpose flour (or gluten-free flour)
  • 1 1/2 cups chicken broth
  • 2 tablespoons apple cider vinegar (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)

Instructions

  1. Prepare the chicken: Season the chicken breasts generously with salt and pepper. Heat a skillet over medium heat and cook the chicken for 5 to 6 minutes on each side until golden brown and fully cooked through. Once done, set the chicken aside to rest.
  2. Cook the smoked turkey bacon: In the same skillet, add the smoked turkey bacon and cook until crisp. Remove and drain on paper towels, then chop into bite-sized pieces for layering later.
  3. Sauté the vegetables: Using the bacon drippings, toss in diced onions, mushrooms, and minced garlic. Sauté until they soften and develop a beautiful golden color, releasing those irresistible aromas.
  4. Make the natural sauce: Sprinkle flour into the skillet with the sautéed vegetables, stirring constantly to avoid lumps. Gradually pour in the chicken broth and apple cider vinegar, stirring until the sauce thickens naturally and becomes smooth. Add the plant-based butter and vegetarian Worcestershire sauce (natural) to finish the sauce with a rich flavor.
  5. Assemble and smother: Place the cooked chicken breasts back into the skillet, cover them with crispy smoked turkey bacon, and top with generous slices of plant-based cheese. Pour the rich natural sauce over everything and allow the cheese to melt slightly over the warm chicken.
  6. Garnish and serve: Sprinkle freshly chopped parsley on top before serving. This adds a delightful freshness and an inviting pop of green that brightens the entire dish.

Notes

  • Use fresh ingredients: Fresh chicken and vegetables will always deliver the best flavor and texture.
  • Don’t skip the resting: Allowing the chicken to rest after cooking keeps it juicy and tender.
  • Make the sauce slowly: Stir the sauce patiently to prevent lumps and achieve a velvety consistency.
  • Adjust seasoning last: Taste the sauce before serving and adjust salt and pepper as needed to balance flavors.
  • Layer ingredients: Smothering the cheese and bacon on top locks in moisture and flavor in every bite.
