Description

Scottish Potato Scones are fluffy, golden, and soft flatbreads perfect as a comforting breakfast, snack, or side dish. Made with starchy potatoes, all-purpose flour, plant-based butter, and plant-based milk, this easy recipe offers a versatile, plant-based, and gluten-free friendly option that brings authentic Scottish flavors to your table with minimal ingredients and simple steps.

Ingredients

Scale

Main Ingredients

  • 500g starchy potatoes (e.g., Russets or Maris Piper), peeled and cut into chunks
  • 125g all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 tsp natural baking powder
  • ½ tsp salt
  • 30g plant-based butter, plus extra for cooking
  • 60ml plant-based milk
  • 1 tsp natural gelling agent (optional)

Optional Variations and Toppings

  • Fresh chopped chives or parsley
  • Pinch of smoked paprika or cayenne pepper
  • Grated plant-based cheese
  • 1 tbsp maple syrup (natural) and ½ tsp cinnamon for sweet version
  • Plant-based butter or fruit preserves for serving
  • Smoked turkey bacon or smoked turkey slices as side

Instructions

  1. Prepare the Potatoes: Peel and cut the potatoes into even chunks. Boil them in salted water until tender, then drain and mash thoroughly until smooth and lump-free. Let them cool slightly before using.
  2. Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, natural baking powder, and salt to evenly distribute the rising agent and salt.
  3. Combine Wet and Dry Ingredients: Add the mashed potatoes and plant-based butter to the dry mixture. Mix using your hands or a sturdy spoon, slowly adding plant-based milk until a soft dough forms. Include the natural gelling agent if using, to improve dough hold.
  4. Shape the Dough: Transfer the dough to a floured surface and knead gently for 1-2 minutes. Roll it out into a circle about 1cm thick. Score the dough into triangular or rectangular shapes using a knife or pizza cutter.
  5. Cook the Scones: Heat a non-stick pan over medium heat and lightly grease with plant-based butter. Cook the scone pieces in batches for 3-4 minutes per side until golden brown spots appear and they feel firm yet soft to the touch.
  6. Serve Warm: Remove the scones from the pan and serve immediately. Enjoy with plant-based butter, jams, or smoked turkey bacon for a delicious meal.

Notes

  • Use starchy potatoes to ensure fluffy and tender scones.
  • Avoid overworking the dough to keep scones light and soft.
  • Cook on medium heat for a golden crust without burning.
  • Score the dough before cooking to help even cooking and portion control.
  • Serve immediately for the best texture and flavor.
