Ingredients

Scale

Main Ingredients

  • 250g fresh mushrooms (mix of cremini, shiitake, or button), sliced
  • 200g pasta of choice (fettuccine, linguine, or penne)
  • 3 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 100g plant-based cheese (plant-based)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste

Optional Variations

  • Handful of baby spinach leaves
  • Red pepper flakes, to taste
  • Toasted pine nuts or walnuts, for garnish
  • Cashew cream or plant-based milk, for a creamy finish
  • Fresh thyme or basil, as an alternative herb

Instructions

  1. Prep the Ingredients: Clean and evenly slice the fresh mushrooms. Mince the garlic cloves finely and chop the fresh parsley. Prepare any optional ingredients if using.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain the pasta, reserving one cup of pasta water for later.
  3. Sauté Mushrooms and Garlic: In a wide skillet, warm the olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add sliced mushrooms and stir occasionally until they release their juices and turn golden brown, about 7 to 10 minutes.
  4. Create the Sauce: Pour in apple cider vinegar and vegetarian Worcestershire sauce (natural). Stir to combine. Add reserved pasta water gradually to reach a smooth, silky sauce consistency. Stir in plant-based cheese (plant-based) until melted and fully incorporated.
  5. Combine Pasta with Sauce: Toss the cooked pasta into the skillet with the mushroom sauce, ensuring noodles are well coated. Season with salt and pepper to taste. Gently mix in chopped fresh parsley just before serving for a fresh, vibrant finish.

Notes

  • Use a hot pan to ensure mushrooms caramelize instead of steaming.
  • Reserve pasta water to create a luscious, clingy sauce.
  • Chop mushrooms uniformly for even cooking and texture.
  • Do not overcrowd the pan to allow proper browning and flavor development.
  • Finish with fresh herbs to enhance brightness and presentation.
