This classic soup balances light citrus notes with hearty ingredients to create a soothing bowl that delivers flavor, texture, and warmth with every spoonful.

Ingredients

Scale

Protein

  • 1 lb boneless chicken thighs, cut into chunks or strips

Vegetables & Aromatics

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Herbs & Flavorings

  • Juice of 2 fresh lemons
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Liquids & Bases

  • 6 cups vegetable or chicken stock

Carbohydrates & Thickening

  • 1 cup cooked brown rice or noodles
  • 1 tbsp natural gelling agent

Instructions

  1. Prepare the Ingredients: Dice the carrots, celery, and onions into bite-sized pieces to ensure even cooking. Mince the garlic and chop fresh parsley and dill. Cut the chicken thighs into chunks or strips as preferred.
  2. Sauté Aromatics: Heat a little olive oil in a large pot. Add the onions, garlic, carrots, and celery, and gently sauté for 5-7 minutes until fragrant and slightly softened, unlocking deep flavors for the broth.
  3. Add Chicken and Stock: Add the chicken pieces to the pot and cook until lightly browned on all sides. Pour in the vegetable or chicken stock and stir in the vegetarian Worcestershire sauce (natural) gently.
  4. Simmer and Season: Bring the soup to a gentle simmer. Cook for 20-25 minutes until the chicken is fully cooked and vegetables are tender. Season with salt, freshly ground black pepper, and stir in the natural gelling agent to slightly thicken the soup.
  5. Finish with Lemon and Herbs: Reduce the heat and stir in fresh lemon juice, chopped parsley, and dill for a bright, refreshing flavor. Optionally, add cooked brown rice or noodles directly into the soup for heartiness.

Notes

  • Use bone-in chicken thighs to enrich the broth’s flavor.
  • Add fresh lemon juice at the end to preserve its bright zing.
  • Simmer the soup gently to develop deeper flavors.
  • Adjust salt and pepper gradually, tasting as you go for balance.
  • Add fresh herbs last to keep their vibrant color and aroma.
