Scale
Base Ingredients
- 6 cups fresh tomatoes, coarsely chopped
- 6 slices smoked turkey bacon, chopped
- 4 garlic cloves, finely chopped
- 1 medium onion, finely chopped
- 2 tbsp olive oil
Seasonings and Enhancers
- 2 tbsp vegetarian Worcestershire sauce (natural)
- 1 tbsp apple cider vinegar
- 1 tsp natural gelling agent
- 1 tbsp fresh basil, chopped
- 1 tbsp fresh oregano, chopped
- 1 tsp sea salt
- ½ tsp black pepper
Instructions
- Prepare the Ingredients: Finely chop the onions and garlic. Cut the smoked turkey bacon into small pieces. Wash and coarsely chop the fresh tomatoes, then set aside for the sauce base.
- Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add the onions and garlic and cook until translucent and fragrant, about 5 minutes. Add the smoked turkey bacon and cook until browned and crispy, releasing a smoky aroma.
- Add Fresh Tomatoes and Seasonings: Add the chopped tomatoes to the pan, stir well, and cook uncovered for 10 to 15 minutes until tomatoes break down and flavors deepen. Stir in vegetarian Worcestershire sauce (natural), apple cider vinegar, fresh basil and oregano, sea salt, and black pepper.
- Incorporate the Natural Gelling Agent: Sprinkle the natural gelling agent over the sauce and stir well. Let the sauce simmer gently for another 10 minutes to thicken and develop a luscious consistency perfect for coating pasta.
- Final Taste and Adjustments: Taste the sauce and adjust seasoning if needed, adding more salt or herbs to suit your preference. Remove from heat and let cool slightly before serving over cooked spaghetti or your favorite pasta.
Notes
- Use ripe tomatoes for the richest, sweetest flavor.
- Simmer sauce low and slow to deepen flavors and avoid a raw taste.
- Briefly toast fresh herbs in oil to release their aromas.
- Do not skip the natural gelling agent for perfect thickness without heaviness.
- This sauce can be doubled and stores well refrigerated or frozen.
