Description

Gingerbread Truffles are cozy, festive treats packed with warm spices like cinnamon and ginger, coated in smooth, creamy plant-based chocolate. Perfect for gifting or enjoying during chilly evenings and joyful celebrations, they combine rich holiday flavors with an indulgent texture in effortless preparation.

Ingredients

Scale

Spice Blend

  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of sea salt

Wet Ingredients

  • 1/4 cup molasses (natural)
  • 2 tablespoons maple syrup (natural)
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract (natural)

Dry Ingredients

  • 1 cup almond flour
  • 1 tablespoon natural gelling agent

Coating

  • 6 ounces creamy (plant-based) chocolate

Instructions

  1. Prepare the Spice Base: In a small bowl, mix ground ginger, cinnamon, nutmeg, and a pinch of sea salt to create your warm, fragrant spice blend that’s the heart of these truffles.
  2. Combine Wet Ingredients: In a mixing bowl, whisk together molasses (natural), maple syrup (natural), coconut oil, and vanilla extract (natural) until smooth and thoroughly combined.
  3. Mix Dry Ingredients: Gradually add almond flour and the natural gelling agent to the wet mixture along with the prepared spice blend. Stir gently until a firm, moldable dough forms.
  4. Chill and Shape: Refrigerate the dough for 30 minutes to firm up slightly, then scoop small portions and roll them between your palms into smooth, bite-sized balls.
  5. Coat with (Plant-Based) Chocolate: Melt the creamy (plant-based) chocolate gently over a double boiler and dip each truffle until fully coated, then set them on parchment paper to cool and harden completely.

Notes

  • Use quality spices: Fresh and potent ground spices dramatically enhance the flavor profile of your truffles.
  • Keep hands cool: If the dough feels sticky, refrigerate your hands with cold water before rolling for an easier shaping process.
  • Melt chocolate carefully: Use low heat to prevent the (plant-based) chocolate from burning or seizing up during coating.
  • Store properly: Keep your truffles in an airtight container to maintain freshness and texture for days.
  • Customize coating: Mix a pinch of spice or sea salt into the chocolate for an extra flavor dimension that excites the palate.
