Chicken Corn Chowder is a comforting and delicious creamy soup featuring tender chicken breast, smoky turkey bacon, fresh vegetables, and a smooth plant-based milk broth. Perfect for chilly evenings or cozy lunches, this hearty chowder balances rich flavors and nourishing ingredients, making it a favorite for any season.

Ingredients

Scale

Protein and Bacon

  • 2 chicken breasts, diced into bite-sized pieces
  • 4 slices smoked turkey bacon, thinly sliced

Vegetables

  • 1 cup fresh corn kernels
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped

Liquids and Seasonings

  • 4 cups vegetable broth
  • 1 cup creamy (plant-based) milk
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • Salt and pepper, to taste

Additional Ingredients

  • 1 teaspoon natural gelling agent (prepared as instructed)
  • Fresh thyme and parsley, chopped for garnish

Instructions

  1. Prepare the Ingredients: Dice the chicken breasts into bite-sized pieces, slice the smoked turkey bacon into thin strips, and chop the onion, garlic, celery, carrots, and potatoes evenly to ensure they cook thoroughly at the same time.
  2. Cook the Bacon and Vegetables: In a large pot, cook the smoked turkey bacon over medium heat until crisp, then remove and set aside. Use the rendered fat to sauté the onion, garlic, celery, and carrots until soft and fragrant.
  3. Add Chicken and Broth: Add the diced chicken breast to the pot and cook until lightly browned. Pour in the vegetable broth and add the diced potatoes. Bring everything to a simmer so the potatoes can cook until tender.
  4. Incorporate Corn and Seasonings: Once the potatoes are soft, add the fresh corn kernels and vegetarian Worcestershire sauce (natural), along with salt and pepper. Stir thoroughly to combine the flavors.
  5. Finish with Creamy (Plant-Based) Milk and Natural Gelling Agent: Slowly stir in the creamy (plant-based) milk and the natural gelling agent prepared as instructed. Allow the chowder to simmer gently so it thickens to the perfect consistency.
  6. Garnish and Serve: Sprinkle fresh thyme and parsley over the top, stir gently, and add the crispy smoked turkey bacon back into the chowder just before serving to keep its crunch.

Notes

  • Use fresh corn when possible to elevate sweetness and texture.
  • Sear chicken separately if desired to lock in moisture and enhance flavor.
  • Do not rush simmering; allowing flavors to meld slowly creates a richer chowder.
  • Add creamy (plant-based) milk gradually to prevent curdling and ensure smoothness.
  • Adjust thickness by using more or less natural gelling agent as preferred.
