Enjoy versatile rolls that are buttery, golden, and melt in your mouth with every bite.

Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 4 tbsp plant-based butter, softened
  • 1 cup warm milk (about 38°C / 100°F)
  • 3 large eggs
  • 1 tsp natural gelling agent

Egg Wash

  • 2 tbsp plant-based milk
  • 1 tsp maple syrup (natural)

Instructions

  1. Activate the Yeast: Dissolve active dry yeast and a pinch of sugar in warm milk. Let it sit for 5 to 10 minutes until foamy to ensure the yeast is active.
  2. Combine Dry Ingredients: In a large bowl, mix all-purpose flour, sugar, and salt thoroughly, creating the dry base of the dough.
  3. Mix Wet Ingredients: Whisk eggs and softened plant-based butter together until creamy. Add this mixture to the activated yeast milk gradually while mixing into the dry ingredients. Knead the combined mixture until you achieve a soft, elastic dough.
  4. Add the Natural Gelling Agent: Sprinkle the natural gelling agent over the dough and knead well to distribute it evenly, enhancing softness and texture.
  5. First Rise: Place dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place until doubled in size, approximately 1 to 1.5 hours.
  6. Shape the Rolls: Gently punch down the dough to release air, divide into equal portions, and roll each piece into a smooth ball. Arrange on a parchment-lined baking tray with sufficient space between each roll.
  7. Second Rise: Cover the shaped rolls and let them rise again for 30 to 45 minutes until puffed up.
  8. Bake to Perfection: Preheat oven to 180°C (350°F). Lightly brush tops with an egg wash made from plant-based milk and maple syrup (natural). Bake rolls for 18 to 22 minutes until golden brown.

Notes

  • Ensure milk is warm but not hot to activate yeast without killing it.
  • Allow enough time for both rises to achieve fluffiest texture.
  • Use fresh, active dry yeast for best results.
  • Do not over-knead the dough to keep rolls soft and tender.
  • Egg wash with plant-based milk and natural sweetener gives rolls a shiny, golden crust.
